Meat Pie

Ghanaian meat pies are delicious pastry snacks filled with seasoned and spiced meat. Here’s a simple recipe for making Ghanaian meat pies:

Ingredients:

For the Dough:

  • 4 cups all-purpose flour
  • 1 cup butter (cold and cubed)
  • 1 teaspoon salt
  • 1/2 cup cold water

For the Filling:

  • 1 pound ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 medium-sized potatoes, peeled and diced
  • 1/2 cup frozen peas
  • 1/2 cup carrots, diced
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions:

For the Dough:

  1. In a large mixing bowl, combine the flour and salt.
  2. Add the cold, cubed butter to the flour mixture.
  3. Use your fingers to rub the butter into the flour until it resembles breadcrumbs.
  4. Gradually add cold water and mix until the dough comes together.
  5. Knead the dough on a floured surface until smooth.
  6. Cover the dough with plastic wrap and let it rest in the refrigerator for at least 30 minutes.

For the Filling:

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
  3. Add ground meat and cook until browned.
  4. Stir in curry powder, thyme, salt, and pepper.
  5. Add diced potatoes, carrots, and peas. Cook until the vegetables are tender.
  6. Remove the mixture from heat and let it cool.

Assembly:

  1. Preheat your oven to 350°F (180°C).
  2. Roll out the chilled dough on a floured surface to about 1/8 inch thickness.
  3. Use a round cutter or a glass to cut out circles from the dough.
  4. Place a spoonful of the cooled meat filling in the center of each circle.
  5. Fold the dough over the filling, creating a half-moon shape, and crimp the edges with a fork to seal.
  6. Place the assembled pies on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 25-30 minutes or until the pies are golden brown.
